Method
Bonfadini vineyards in Franciacorta represent about 10 hectares of land, including both property and conferment areas. An important portion is worked with the implementation of precision farming techniques.
High density of vines per hectare together with spurred cordon pruning, targeted grassing and pre-harvest thinning, allow to obtain a few clusters of great quality.
In the winery, we can count on the intangible experience heritage and on excellent technologies that allow maximum yield of the grapes.
Musts are divided into four fractions and fermented separately in steel tanks or in oak barrels. Some base wines, after alcoholic fermentation and possibly malolactic fermentation, undergo batonnage procedure, that is a yeast mixing operation aiming at enhancing the aromatic richness.
